Hi, I’m Courtney—a Registered Dietitian Nutritionist and prediabetes nutritionist, mom of two, and lifelong Elko local.

For over 15 years, I’ve helped people take control of their health through realistic, sustainable nutrition changes—without diets, food rules, or extremes.

I earned my Bachelor’s and Master’s degrees from the University of Idaho, with a focus on human nutrition, behavior change, and disease prevention. But in 2021, my work became deeply personal when I was diagnosed with Primary Adrenal Insufficiency (Addison’s Disease) and Thyroid Cancer.


Today as a woman in my 40’s, I rely on daily steroid medication, which means I have to be intentional about blood sugar stability, nutrition, movement, stress, and sleep—every single day. This lived experience has made me even more passionate about being a nutritionist for prediabetes, helping others (especially women 40+) balance their blood sugar without cutting carbs or giving up their favorite foods.

I bring both professional training and personal understanding to every client I work with—and I’m here to help you take the guesswork out of eating well for your body, your life, and your long-term health.

When I’m not coaching clients or creating recipes, you can find me chasing my two daughters on the soccer field, working on house projects with my husband, or enjoying an ice cream, a Diet Coke, or a hazelnut latte—because yes, you can have balance.
